Gluten Free Bread

I'm attempting my first gluten free bread today. I looked up a bunch of recipes online, found one I liked and... completely changed all the ingredients to match what I have in the house.

*pokes rising dough... waits for explosion*

So far so good! I just wanted to know if other people have the same baking technique as me? Do you follow directions exactly or do you look for techniques and then use what you have on hand?
